Polled was available in Ireland, but was not one of the founding traits of Dexters.
Yes, there would have been polled small dwarf cattle with legs short between the knee and fetlock that would have qualified for inclusion in the new Dexter herd book. However, since one of the selection traits was horns (of any shape, by the way), they were not included in those selected to become 'Dexters'. So, they existed, but weren't used.
Angus, along with Jersey, were the two most popular breeds to cross with a Dexter and there were hundreds of them.
Saltaire Platinum came from a horned/polled mating and Fred was well aware of this before he collected semen from the bull.
